Pumpkin Chocolate Chip Muffins

(Adapted from KristinesKitchenBlog.com)

Ingredients:

  • 6 tbsp organic butter or coconut oil
  • 1-15 oz. canned pumpkin
  • ½ c honey or pure maple syrup
  • ¼ c almond milk 
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tbsp pumpkin pie spice
  • 1 ¼ c whole wheat flour 
  • 1 pouch vanilla rePLACE
  • ½ c chocolate chips

Directions: 

  1. Preheat oven to 350 degrees 
  2. Melt the oil and mix with the wet ingredients
  3. Slowly mix in the flour and rePLACE
  4. Mix in the spices and the rest of the dry ingredients
  5. Pour in chocolate chips
  6. Scoop into lined muffin tins
  7. Bake for 15-18 minutes or until a toothpick comes out clean

Pumpkin protein bites

Pumpkin Protein Bites

Ingredients: 

  • 1 pouch vanilla rePLACE
  • 3 tbsp pumpkin puree⁠
  • 1/4 c raw honey or pure maple syrup ⁠
  • 2 tbsp chocolate chips ⁠
  • 1 c almond flour (or your choice of healthy flour) ⁠
  • 1 tsp pumpkin pie spice ⁠

Directions: 

  1. Mix all together and roll into little bite-sized balls. Keep in the fridge or freezer for a healthy treat! 

Note: If too dry, add a little bit more pumpkin puree, if too wet, add a little more flour. 

Pumpkin Overnight Oats

Ingredients:

  • ½ c old fashioned rolled oats
  • ½ c almond milk
  • ¼ c plain Greek yogurt
  • ½ c pumpkin puree
  • ½ pouch of vanilla rePLACE
  • ½ tsp pumpkin pie spice
  • 1 tbsp pure maple syrup

Directions: 

  1. Mix all the ingredients together in a glass jar. Cover and store in the fridge overnight. Enjoy in the morning!

Pumpkin Spice Protein Shake

Ingredients:

  • 1 c almond milk
  • ¼ c pumpkin puree
  • 1 tbsp Pure Maple Syrup or Honey 
  • 1 pouch vanilla rePLACE
  • ½ tsp pumpkin pie spice

Directions: 

  1. Blend well and enjoy!
